While the use of additives and preservatives in foods is of legitimate concern, it is arguable that the substance MSG is poorly understood, and has become vilified despite a lack of sound scientific evidence. Consequently, foods utilizing the flavour enhancer may be deemed inferior and presented in a negative way in mass media. This vilification, it is argued, reinforces food classism and assumptions about race.</p> ER -
